This weekend has been a whirlwind! I can’t believe tomorrow is Monday already. On a more fun note, my friend Kait from my masters program got engaged over winter break, so we wanted to throw her an engagement party as a surprise! The back room in my house came in handy yet again! My friend Emily from my masters program was the other planner, so we told Kait we were going to brunch at The Dunlavy to celebrate getting through the first couple weeks of the new semester. Emily picked Kait up and then came to my house, where I pretended I still needed more time to get ready. Then when they both came in, all the other girls from my program jumped out and yelled surprise! And smalllll world my roommate knows Kait from middle and high school, so she joined as well! P.S. we have all these amazing photos from the party thanks to Emily 🙂
If you’re ever in Houston and need to decorate for an occasion, you should 100% go to Arne’s. They are located in the Heights area, and they have everything plus more that Party City has for waaaayyy cheaper. That’s where we got the cute rose gold cups and matching plates and forks in the next pictures along with most of the other decorations.
I made all the egg dishes, and a couple of girls brought the desserts and fruit salads. Everything was delicious! I make quiche often for breakfast meal prep, so I went recipe-free and improvised on those. The recipe does not touch on caramelizing the onions, so I’ll share my experience! To caramelize the onions, I roughly chopped half an onion and then sauteed it in a skillet over medium heat in a mix of about 1 tbsp olive oil and 1 tbsp butter. After about 5 minutes, I added a few pinches of salt and sugar. The key to keep the onions from getting burnt is to keep adding water! I added about 1/4 cup of water every 5 minutes for the next 30 minutes or so until the onions looked caramelized enough. The rest of the frittata recipe is super simple.
This weekend has been really fun. I actually did 90% of my homework on Thursday after class and Friday during the day (I have no class on Fridays). It made the weekend SO much more relaxing, and I got to devote a chunk of time to shopping at Arne’s/decorating, cooking, and hosting, which I love! I’m about to go to dinner with a few friends from high school and then chill for the rest of the night. Happy Sunday!
