Happy mom day to all the mothers who read my blog! I got to spend the evening with my mother (socially distanced) in our backyard enjoying a very spring-esque menu. Also, Houston weather is totally bonkers right now. It was a crisp 77 degrees out with no humidity which is pretty much unheard of in May. Perfect weather for outdoor dinner!
We started off the meal with some bacon wrapped dates made by my mom and some strawberries.
The next “course” was some kale pesto pizza from one of my favorite recipe bloggers, Cookie + Kate. This pizza was so yummy – you replace the basil in pesto with kale, and it’s actually a pretty tasty substitute. I even made my own whole wheat pizza dough with yeast and everything. I had never used yeast before, so this pizza making was a learning adventure. My mom said my crust tasted professional, so there’s that 🙂 Here are some process pics along with the final product!
Finally, we had some chilled salmon and veggie pasta that was quite delicious. Our family friend Lee made it and gifted some to us. It had potatoes, asparagus, snap peas, red onions, chives, salmon, and a lemon juice dressing. Thank you Lee for giving this to us – we loved it!
Of course, our dog Elvis joined for the occasion.
I was able to get an order of Mother’s Day cookies from a local cookie decorator, Dough by Mo, and they were so pretty! Morgan is very talented. My mom follows her Instagram, so it was just too perfect! I gave them to her along with a homemade card. I recently bought a sketchbook of nice paper to doodle on, and the investment has paid off.
