Make your own poké bowls!

Hello and happy Monday! All this extra time at home has gotten me to try intricate recipes that I normally would stay clear of. This is not one of those! These poké bowls were a great break from the other meals I have been making that have been much more labor intensive. Before I get to how I made the poké bowls, let me memorialize some of the recipes I have made recently with some pictures (captions link to a recipe if one was used).

Chicken fajitas – I caramelized onions on the cast iron along with a bell pepper and added seasoning + chicken strips towards the end. And of course butter.

Now to what this post is supposed to be about after all those food pics … POKÉ! I was inspired by one of my friends who posted a homemade poké bowl on her Instagram story recently. I set out to be like her and went to H-Mart in Chinatown to pick up some necessary goods for my homemade bowls.

My shopping list at H-Mart included:

  • sushi grade fish
  • seaweed salad
  • microwaveable white rice (because I do not have a rice cooker)
  • edamame
  • avocado
  • salmon furikake rice seasoning

Brand of microwaveable rice we got – it was nice and sticky. I should just bite the bullet and get a rice cooker at this point!

Once you have all the ingredients you want, it’s basically just a matter of assembling everything! Some other things I would consider adding are ginger, mango/pineapple, sriracha mayo, wasabi, etc. I liked how simple this one was, so you really got to taste the flavor of the sashimi.

This was a fun activity, and it ended up being as good as going out for poké. Many of our fav sushi places are closed, so this was a welcome treat! All this cooking has given me even more of an appreciation for eating out. I see more takeout in this week’s future hehe. Stay safe everyone and have a good week!
