Happy quarantine Easter!! This is one of my favorite holidays, so I wanted to make the most of today despite not being able to gather with friends and family. Funny enough, Jake and I’s anniversary was also today, so we found even more reason to have a good time.
We started off the day making brunch with Georgia, and we watched my local church service online while we cooked. The music was so beautiful, and it helped maintain some normalcy during this. However, “normalcy” may not be the right word because I’ve never been poaching eggs while listening to my pastor giving her sermon before LOL.
A couple of months ago I found the blog crumbkisses.com when I was looking for a good seared scallops recipe (which hers is great btw!) Her blog is a mix of recipes, travel, and just everyday life. I was perusing it the other day and noticed she had a recipe posted for Turkish eggs. I had tried this dish before when I would go out to eat for brunch (ohhh those were the days…), but I had never attempted to make it myself. It turned out super well! Does anyone else have trouble finding pita bread at the store? Funny enough, Jake told me he always has a hard time finding it too! And most of the time, that store bought stuff isn’t even that good, so I just decided to use some hardier bread we had for the base. I added a layer of Greek yogurt + minced garlic and some salt, then two poached eggs, roasted spicy chickpeas, buttery toasted walnuts with red pepper flakes, feta, and fresh herbs (parsley + rosemary + dash of mint) from my mother’s garden – gives me an excuse to go social distant visit her in her backyard hehe. Check out the recipe linked for more details on the actual steps. It was definitely an involved brunch … some walnuts may have been burned in this production. It was soooo worth it and such a good weekend treat though!
After brunch, the three of us went on a walk around our cute little neighborhood, and then we did some crafting. Jake and I just did a simple painting of a cactus in the desert. It was very relaxing to sit and paint. Georgia did embroidery – she’s been on a kick!
Since it’s our anniversary, we wanted to make some sort of dessert (we’re both big dessert people haha), so I found this chocolate cake recipe on Pinterest. It made SO much chocolate cake and icing (glaze?) – I have no idea what to do with all of it. It also was not the most photogenic thing I’ve ever baked. I’m not including a pic but just imagine two giant loaves of delicious chocolate cake with way too much chocolate icing HA I guess I shouldn’t be complaining. It definitely tastes great, and Jake loves it so oh well!
We had a picnic dinner in my front yard to change things up a little. It was fun to waive to our neighbors walking by as we ate. We made salmon in the oven and some angel hair pasta with olive oil, lemon, and spinach. It was yummy and simple.
We both got to call our families for an Easter time video chat (Jake’s on his right now while I write this), and my family on my call all shared with each other what we have been eating this weekend. Seems to be the thing to do lately! Everyone is so proud of their homemade creations! I have a group message with friends from college, and we are constantly sending pics of our meals and baking creations. My friend Jamie is a baking machine, so she’s always outshining all of us in the group chat. One of our friends literally sent “Let’s see those dinner plates squad” around 7 pm today, so it’s become an expectation at this point!
